Curried Chicken Salad

I love any kind of chicken salad and this is my favorite.  It is great summer food but we are not ready to put it away for the winter.  Try it before the weather turns cold.
                                                                                                   
Curried Chicken Salad

2 organic chicken breast halves, cooked and diced (I prefer roasting it as it gives better flavor)
1 bunch organic celer, leaves removed and washed and diced
¾ cup onion, diced
1 pound strawberries, washed and cut into small slices
¾ cup toasted almonds, diced
½ cup coconut, toasted
rounded ½ cup veganaise or mayonnaise
2 T. lemon juice
2 T madras curry powder
salt and pepper to taste

Layer everything in the bowl in the order given and toss. Adjust seasoning as necessary. Chill until served.
